I love your site and all the information you share! After reading about Ceylon cinnamon of course I wanted to try it. I bought the one you say you get and have a link to. Just tried it. To say it has a milder taste is generous. I find it has no taste! I have tried it in my oatmeal the last two days and am putting 3-4 times the amount as the store cinnamon and still can hardly taste it. It does have a mild sweet cinnamon aroma.
Is this normal? When you say you use Ceylon for culinary use what measurement equivalent do you use? When I used the called for amount in my smoothie I cannot taste cinnamon at all. Are you just supposed to use way more of this type of cinnamon? Or is my experience not normal?
I wanted to ask your opinion before I contacted the seller or posted feedback.

Ceylon cinnamon always named as Ceylon cinnamon and come from Sri Lanka. It is rare and expensive.

The cinnamon that commonly available in US is not the Ceylon cinnamon. Cassia cinnamon (Cassia, Korintje and Saigon) covers more than 90% of the market.

Take a teapot with water, add a few whole rolls of cinnamon to it, top with enough water, bring to a boil and keep heated. After 10 to 15 minutes it should be ready to drink.
Tastes amazing, no sweetener needed.
Amazingly the longer it steeps, the sweeter it gets, simply delicious

I bring to a simmer for about 15-20 mins then strain. After it has cooled a little I add 1/2 teaspoon of raw honey and drink as a spicy tea. Very good when you have a sore throat.

My daughter, a nurse, discovered on medical sites she has access to, that cassia erodes the protective layer of bacteria so the body and antibiotics can kill them! Hospitals across this country are beginning to use EOs in addition to pharmaceuticals. We mixed a few drops with lotion and applied to the skin. My husband, who had almost died, went from a ventilator in the ICU to walking out of the hospital in two weeks! The hospital staff was in awe!

Not that I’m giving medical advice here. Just saying that cinnamon is part now of my ‘supplementation’ because it also helps the body kill bad bacteria.

I have taken to making coffee and then adding a cinnamon stick and a green cardamom pod and letting it marinate over night for a spicy coffee drink that I heat in the morning.
